First it is important to select fresh courgette flowers.
Then, it is necessary to clean the flower carefully in order to remove the flower pistil and any pollen in the petals.
You can let the washed courgette flowers in a colander to dry.
In a deep plate add the two eggs and whisk until they become a homogeneous mix.
Then add the remaining ingredients in the plate with the following sequence: the salt, the ground pepper, the dill, the milk and finally the flour.
Heat a non-stick frying pan and add the two tablespoons of olive oil. Dip each courgette flower into the mix to absorb the liquids and place it in the frying pan.
Fry for a few minutes and turn them around to fry from both sides. Repeat until all courgette flowers are fried.
