This is a white bread recipe for a home bread maker. The flour used here is type 45 in France (farine de blé Type 45), type 405 in Germany, type 00 in Italy, which basically is used in pastry. This is a very fine flour with low ash levels. However, there are many flour types for bread you can use. This recipe is for the quick bread maker programme in which the water should be warm.
In the machine baker bowl add the sugar, the salt and the olive oil.
Warm up 330 ml of drinkable tap or bottled still water to body temperature (37 degrees celsius). Pour the water in the bread maker bowl for the salt and sugar to melt. Tip: in order to save time and energy, warm up 100 ml of water to near boiling and mix with the remaining room temperature water.
On top of the water add the flour carefully in order to cover it. Crumble and add the fresh yeast or just add the dried yeast on top of the flour. Then put the bowl in its position in the bread maker, close the lid and press the start button.
The bread maker will stir the ingredients into a nice, soft nearly tight dough. It will make a noise and pause for you to check if the dough is ok and to add any extra ingredient. If the dough is fine just add the sunflower seeds. Do not keep the lid open for long time. Tip: if the dough is rather semi-liquid you need to add some flour or if it is too dry to add some water. This is important for the dough to grow / inflate.
Let the bread maker program finish and remove the bread. Be careful not to burn yourself as all the machine parts must be hot! Place the bread on a surface (i.s. a grate) and let it cool and dry for at least 30 minutes. Enjoy!
