Pan fried courgette flowers
A fresh, spring/summer recipe for a starter or snack.

Pan fried courgette flowers
Ingredients
- 10 courgette flowers
- 2 eggs
- 50 ml fresh milk
- 2 tablespoons olive oil
- 1 tablespoon flour
- sea salt
- ground pepper
- dill
Instructions
- First it is important to select fresh courgette flowers.
- Then, it is necessary to clean the flower carefully in order to remove the flower pistil and any pollen in the petals.
- You can let the washed courgette flowers in a colander to dry.
- In a deep plate add the two eggs and whisk until they become a homogeneous mix.
- Then add the remaining ingredients in the plate with the following sequence: the salt, the ground pepper, the dill, the milk and finally the flour.
- Heat a non-stick frying pan and add the two tablespoons of olive oil. Dip each courgette flower into the mix to absorb the liquids and place it in the frying pan.
- Fry for a few minutes and turn them around to fry from both sides. Repeat until all courgette flowers are fried.
- Let them cool for 5 minutes and serve. Enjoy!
Notes
You may use water instead of milk.
