Baby puree with potato, carrots and courgette

This is a vegetable puree / velouté you can prepare for your baby if your pediatrician approves your baby can eat these vegetables.

Ingredients
  

  • 1 potatoe
  • 2 carrots
  • 1 courgette
  • 1 tablespoon olive oil extra virgion & bio

Instructions
 

  • Carefully choose the ingredients: a medium sized potato, two good sized carrots and a large courgette. This should be enough for a meal of a baby between 11 and 12 months old.
  • Peel the skin of the vegetables and wash with drinkable water.
  • Cut the vegetables in cubes. The potatoes and carrots need longer time to cook, thus they can be more finely cut compared to courgettes.
  • Place the vegetables in a small saucepan, wash with drinkable water, rinse and add drinkable water to cover them (about 1 litre) depending on the saucepan's size.
  • Boil / cook the vegetables for about 30-45 minutes depending on the heat, the water and the vegetables. Make sure that there is enough water in the saucepan at all times (if necessary add some). It is important that the vegetables do not dry in order for the puree to be tender and liquid enough. You can check if the vegetables are cooked using a fork. Always take precautions, keep the baby away from the saucepan and protect yourself from the boiling water.
  • Prepare the puree: add the vegetables and the olive oil in a bowl and mash them by hand or more easily by using a small blender.
